And here we go!
Still not able to check in online, but I'm not panicking (as I normally would be) because we paid for our seat selection when we booked. The dogs, the birds, the plants are all set up for the week. My bag is packed with room to spare (for shopping in Europe!!) and I am now in the "what have I forgotten?" phase. Had a nice soak in the hot tub as the sun peeked through the clouds, and after a shower I am dressed and ready to go. Still an hour before we leave for the airport! This is going to be a long day. But at least we have the priority boarding area to look forward to... unlimited drinks and food and big comfy chairs. The only way to go!! Next time I check in, we will have arrived and boarded Liberty of the Seas... until then!! Ciao!

Checking In... or Not!
And the frustration of technology strikes again! I've spent the last little while organizing the items for my carry-on, tabbing the printouts I have already printed.... the one last item being the boarding pass for our flight. And lo and behold... technical difficulties with on-line check in for Air Transat. Thank goodness we paid for our seats ahead of time! Otherwise I would be stressing out in a major way. It really is worth the extra $ to choose your seats when you book a flight. Tonight's glitch is proof positive of that! Hopefully in the morning I can check in and print off while doing laundry, setting up the birds, the dogs, the plants, and trying not to forget those last minute things that I always forget. The vacation really begins once I am sitting in seat 5K, looking out the window and ready to wing my way to Barcelona...

Vanilla panna cotta with mixed berry compote

Ingredients
For the panna cotta
• 2 cups heavy cream (if you don’t like it as creamy, you can use half cream and half milk)
• 50g caster sugar
• 1/2 vanilla bean (cut lengthwise and seeds scraped out) or 1 tsp pure vanilla extract
• 1/2 tbsp unflavoured powdered gelatin
• 2 tbsp cold water
• 2 cups heavy cream (if you don’t like it as creamy, you can use half cream and half milk)

• 1/2 vanilla bean (cut lengthwise and seeds scraped out) or 1 tsp pure vanilla extract
• 1/2 tbsp unflavoured powdered gelatin
• 2 tbsp cold water
For the berry compote
• 120g frozen mixed berries
• 30g caster sugar
• 1/2 tsp vanilla extract (can be omitted)
• 120g frozen mixed berries
• 30g caster sugar
• 1/2 tsp vanilla extract (can be omitted)
Instructions
1. Combine cream and 50g sugar in a medium saucepan on medium heat. Add in vanilla bean seeds and pod (or vanilla extract) and bring to a simmer, stirring to dissolve the sugar. Discard vanilla bean pod.
2. Pour the 2 tbsp cold water in a small bowl, add in gelatin powder and let sit for roughly 10 minutes – do not stir.
3. Pour simmered cream mixture over gelatin and stir until all the gelatin is dissolved.
4. Pour cream mixture into 4 serving glasses or ramekins and leave in the fridge to set for a few hours or overnight.
5. Put frozen mixed berries, sugar and vanilla in a medium saucepan and heat on medium high until melted and soft. Stirring occasionally to melt the sugar.
6. Take off heat and cool.
7. When the panna cotta has set, in the fridge and ready to be served, spoon berry compote over the serving glasses and top with a mint leaf. Serve chilled.

So now that I've posted a few of my recent polyvore fashion sets, you may be getting a slight idea of my "style". I love earthy colours and casual clothes. As a lawyer, I have to be dressed professionally every work day, so I enjoy putting together classic, casual outfits. I love boots, purses, jackets and sweaters. The great thing about polyvore is that you can "shop" without spending a penny!
